Have you heard of pumpkin noodles? This delight is a low carb alternative to refined or wholemeal white flour noodles. You can prepare with the perfect spaghetti squash squash, pasta-like preparation, excellent yarn texture, soft, and the color similar to normal noodles.

If you prefer, you can use another pumpkin you find in the produce, although the texture is slightly different. Another idea is to make the pumpkin puree and then wrap with rice flour or other healthier to prepare pasta noodles.

1. Recipe for light squash pasta  with ground beef
Ingredients:
  • 1 spaghetti squash;
  • 400 g of ground beef;
  • 8 large red peeled tomatoes without skin
  • 1 onion;
  • 3 cloves of garlic;
  • 1 lemon;
  • 2 tablespoons of olive oil;
  • basil leaves to taste;
  • oregano to taste;
  • salt to taste.

Method of preparation:
Season the ground beef with 2 cloves of garlic, salt and lemon and set aside. Cut the pumpkin in half and place in a glass refractory. Microwave for 12 minutes or bake for 25 minutes or until tender. Remove the squash completely, cut into strips with a mandolin and set aside.
Brown the onion and 2 cloves of garlic in the olive oil, season with salt and add the ground beef. When browned well, add the tomatoes. If necessary add some water. Hit salt. Add basil leaves and oregano to taste. Serve with the pumpkin.


 PREPARATION
Preheat the oven to 375?F.
Cut the squash in half lengthwise, remove the seeds from   the central cavity and sprinkle generously with olive oil.
Season the half squash with salt and pepper to taste and  add the cloves of garlic.
Bake for 30 to 50 minutes.
Remove the half squash from the oven.
Using a fork, gently scrape the flesh (filaments   reminiscent of spaghetti). Remove and reserve.
Season to taste, add a drizzle of olive oil and serve  covered with tomato sauce.

 Note: Squash can be served in the style of a cheese  macaroni. Choose a cheese sauce recipe, coat the squash  filaments and serve with a chicken cutlet.
