Pumpkin spaghetti with pesto


 The spaghetti squash with pesto are an ingenious  interpretation of classic Italian cuisine.  Ingredients:
 .400 g of pumpkin
 .100 mL of extra virgin olive oil
 .Three cloves of garlic
 .Half a cup of chicken broth
 .40 g of grated Parmesan cheese
 .10 g of grated pecorino cheese
 .Two tablespoons of pine nuts
 .80 g of clean and dry basil

 How to prepare pumpkin spaghetti with pesto:

  • Peel the garlic and put it in a mortar . Crush them until  they become a paste. Add some basil leaves progressively and  continue crushing with the mortar.
  • Continue this process and add to the mortar the two  tablespoons of pine nuts. Continue grinding and integrating  the ingredients. Continue adding the basil leaves until they  have all mixed in the mortar.
  • Once everything has been well shredded and integrated, add  the Parmesan cheese and the pecorino . Mix with a wooden  spoon and add the extra virgin olive oil. Reserve. With this  procedure the pesto will be ready .
  • For pumpkin spaghetti, remove the peel from it. Once you  have only the pumpkin pulp, proceed to cut into very thin  slices . Then cut these slices in thin strips. That way you  will get pumpkin spaghetti. If you have an artifact that can  convert pumpkin pulp into threads, much better.
  • In a pan, place a splash of extra virgin olive oil and  heat. When it is hot, add the pumpkin spaghetti and sauté .  One minute of sautéing is more than enough. If you want to  add a little more cooking to the pumpkin spaghetti, add  chicken broth. The steam of the chicken broth (three  tablespoons) will make them cook even more.


Top and top with pesto sauce to taste.
